A. Overview
Culinary hunting in Yogyakarta is never ending. Day by day their number is increasing. New kinds of culinary come just at anytime. Among the new ones is the rabbit satay at Kaliurang. Rabbit satay is found almost everywhere outside Yogyakarta, but the one at Kaliurang differs from the rest. Moreover, enjoying it in the cold weather of Kaliurang adds to the enjoyment.
The piquant taste of rabbit satay and its peanut sauce is slightly different from the other satays that are more common for people like chicken and lamb satay. However, rabbit meat has different taste and texture, its piquancy is not as strong as chicken meat and its soft texture is not as hard as lamb meat.
The ingredient for making rabbit satay is mainly the 4-6 month old rabbits. At this age, their meat is soft and sweet. A fat rabbit can make 60-90 skewers. The rest of the meat are chopped and together with the bones are made into curry.
Rabbit satay serving is similar to that of the other satay. It is also accompanied by peanut sauce mixed with slices of garlic and onion, added with sweet ketchup and lime juice. In Kaliurang, it is usually served with warm rice and a glass of Kaliurang special beverage called bandrek. Sometimes, people eat the satay with jadah tempe which is also another special culinary from Kaliurang.
B. Features
Rabbit meat also has a special virtue of healing asthma. This merit is scientifically proven by the students of Brawijaya University of Malang. For this scientific discovery, they were crowned the national champions in the national scientific championship of science held in Solo some times ago.
Based on the research result, rabbit meat can also heal laryngitis. Rabbit meat contains a substance called kitotefin compounds and other substances like omega-three and omega-nine fatty acids to heal asthma. Moreover, rabbit meat stabilizes mastosit cell membrane and stimulates the formation of immunity system which coheres the matrosit cell in the body. When asthma comes, it is actually the respiratory cells that are breaking which results in the contraction of the smooth muscles of the respiratory passage. The narrowing respiratory passage causes asthma.
Regular consumption of rabbit meat can stabilize the cell membrane, thus prevents asthma. Only, when processing rabbit meat as medication, you must be very careful not to lose the kitotefin value. It is suggested that to cook the rabbit meat by roasting it in medium heat so as to keep the kitotefin value. The best temperature for cooking rabbit meat is not over 150o Celsius.
C. Location
You can find rabbit satay on the restaurants and food stalls in Kaliurang tourism resort in Sleman Regency, Yogyakarta. Most of them ply their trade at Telogo Putri tourism resort of Kaliurang.
D. Price
A portion of 10 skewers of rabbit satay is usually priced at Rp 9,000. For you who want a portion of it with a glass of wedang bandrek must pay Rp 4,000.
