A. Overview
Bantul Regency of the Special Province of Yogyakarta is known for having many delicacies, one of them is heaped peanut fritters called peyek tumpuk. Those who have never had this snack would probably think it does not taste good for its unappealing look and weird color, if compared to the other crackers. It hardly arouses your appetite. But once you have a taste, you will certainly ask for more.
This cracker is a creation of Mbok Tumpuk and has been known since 1975. Bantul was the only place to find this food but now there are available in many stores outside the area. You can often find peyek tumpuk in snack stores in Yogyakarta. It was named after the creator, Mbok Tumpuk, and also because it is sold in heaps (“tumpuk” means “heaped”). Thus people know it as peyek tumpuk.
In accordance to its name, the cracker is served in heaps. But different from usual crackers, the making of peyek tumpuk is a long process, in terms of time. Dough of flour, egg, and peanut is fried two times in day one. Then it is fried once again in the next morning to get the white color and crispiness.
First of all, the frying process is meant to heap the cracker. The first frying requires high temperature to get the peanuts fully done shortly. After that, we should take the fritters into the second frying process in which the fire is in medium temperature. This is in order to get all the heaps completely fried. Before the last frying process, the fritters would need to be left in open air for a night to give it crispiness and piquance.
B. Features
Peyek tumpuk is white-colored and a bit messy texture-wise. At a glance, you might not think it is a cracker until you get your first bite of it. The cracker is so crunchy and deliciously piquant. The peanuts, which are hid within the coating, taste so good that you will find it not easy to stop eating.
The cracker is not brownish yellow like the usual ones since it uses corn flour aside from wheat flour. The tastiness of the cracker also owes to the other spices such as coriander, onion, candle nut, salt, coconut milk, and egg.
Peyek tumpuk has been very popular that many people outside Bantul take their time to come over and get some of this snack. As for the Jogjanese, they often buy some peyek tumpuk for their relatives outside the area.
